For Lemon Rice

  • 1.5 cups basmati rice (cooked and cooled)
  • -2 tablespoons cooking oil (preferably mustard oil)
  • 1 teaspoon mustard seeds
  • 1.5 teaspoon chana dal
  • 1 teaspoon urad dal
  • 1/2 teaspoon cumin seeds
  • 1/2 tablespoon chopped ginger
  • 1/2 cup peanuts
  •  
  • 1/2 cup cashews (optional)
  • 1/2 teaspoon turmeric powder
  • A pinch of asafoetida (hing)
  • 2-3 green chilies, finely chopped
  • 8-10 curry leaves
  • 1/4 cup chopped cilantro (coriander leaves)
  • Salt to taste
  • Lemon Juice (adjust according to taste)
