Ingredients
For Lemon Rice
- 1.5 cups basmati rice (cooked and cooled)
- -2 tablespoons cooking oil (preferably mustard oil)
- 1 teaspoon mustard seeds
- 1.5 teaspoon chana dal
- 1 teaspoon urad dal
- 1/2 teaspoon cumin seeds
- 1/2 tablespoon chopped ginger
- 1/2 cup peanuts
- 1/2 cup cashews (optional)
- 1/2 teaspoon turmeric powder
- A pinch of asafoetida (hing)
- 2-3 green chilies, finely chopped
- 8-10 curry leaves
- 1/4 cup chopped cilantro (coriander leaves)
- Salt to taste
- Lemon Juice (adjust according to taste)
Instructions
For Lemon Rice
- Rinse and soak Eleven’s Basmati Rice in cold water for 30 minutes.
- Boil water in a pot and add the rice to it. Keep it on medium flame until rice is 70-80% cooked (Remember, the texture of rice shouldn’t be mushy).
- Heat a tablespoon of oil in a pan. Roast peanuts (quantity as per preference) until they’re crunchy and golden. Remove them on a plate.
- Heat some more oil in the same pan. Add cumin seeds, mustard, 1.5 teaspoon chana dal, and 1 teaspoon urad dal. Keep it on a low to medium flame until they’re golden brown.
- Add curry leaves, ginger, and green chilies to the pan. Cook for 20-30 seconds till you can drown in the beautiful smell of curry leaves.
- Then, add a pinch of asafoetida, turmeric, and salt to enhance the flavors.
- Add half a cup of water to the mix and continue to stir it till the water evaporates, leaving a mildly crunchy mixture.
- Assemble the final dish by adding your rice to this mixture. Squeeze lemon juice over the mixture and stir it properly.
- Taste it to check the salt and lemon balance and garnish it with roasted peanuts and cilantro.
