Ingredients
For Mexican Arroz con Pollo
2 tsp garlic powder
1 ½ tsp paprika
¾ tsp cumin
½ tbsp red chili powder
½ tsp oregano
3 tbsps olive oil
6 chicken thighs
¾ cups pork sausage (Chorizo)
1 carrot, diced
1 bell pepper, finely chopped
1 medium onion, diced
1 ¼ cups Basmati rice
2 tbsps garlic, finely chopped
2 ½ chicken broth
1 ¼ cup tomato sauce
Salt and Pepper to taste
Fresh coriander, for garnishing
Instructions
For Mexican Arroz con Pollo
For marinating the chicken, blend chili powder, garlic powder, paprika, cumin, and oregano. Add salt and pepper for taste.
Coat the chicken on all sides with the mixture. Keep it undisturbed for 15-20 minutes.
Heat olive oil in a pan and add the chicken thighs. Cook it till every side is properly cooked and brown and remove it on a plate.
Cook the chorizo in the same pan for 4-5 minutes.
Now’s the time for veggies. Cook onion and carrot till soft and add bell peppers and garlic. Stir it for a minute.
Add the tomato sauce and chicken broth to the pan. Once it boils, lower the flame and add rice to it.
Stir it for a few minutes for the rice to soak in the flavor.
Add the chicken pieces and cover the dish with a lid. Let it cook for 20-25 minutes on medium flame.
Keep it aside for 5-7 minutes and garnish with fresh coriander.
