- Usually, fried rice is best cooked with a-day-old rice. If it isn’t available, cook rice al-dente to avoid lumpy and mushy fried rice.
- Heat coconut oil in a medium-sized pan or wok and add tofu. Cook it till it’s golden- brown on all sides.
- Once Tofu is cooked, add ginger and garlic to the pan and sauté until you can drown in its captivating aroma.
- Add all vegetables (except green onions) and pineapple to the mix. Cook until the vegetables are tender but crispy.
- Add curry powder and soy sauce (or Tamari) to the mix with a pinch of salt and stir it well.
- Finally, add rice to the pan and coat it with the vegetables. Cook for 2-3 minutes.
- Top it with cashews and green onion for additional crunch. Mix it well.
- Garnish with fresh coriander and serve hot!
