Chicken Tikka Masala with Saffron Rice

For Chicken Tikka
- 500 grams diced chicken breast (boneless)
- 75-80 gms yogurt
- 2 tablespoons Tikka Masala Spice Mix
- 1 tablespoon Lemon juice
- Vegetable Oil
- 2 onions, finely chopped
- 4-5 garlic cloves, minced
- 7 grams ginger, grated
- 1 can of diced tomatoes/ 2 Freshly chopped Tomatoes
- 1 cup cream
- Fresh cilantro for garnishing
- Salt and Pepper for taste
For Saffron Rice
- 2 Cups of Eleven Premium Basmati Rice
- A pinch of saffron (Soaked in warm milk)
- Water
- Clarified Butter (Ghee)
- Salt to taste



Instructions
For Chicken Tikka
- Take a bowl and blend yogurt, Tikka Masala Spice mix, lemon juice, and a pinch of salt.
- Add the chicken pieces to the mix and coat it well. Marinate it for at least 40 minutes (Longer marination, better flavor).
- For the Tikka Sauce, heat some oil in a pan. Add chopped onions and saute until it turns golden brown.
- Add garlic and ginger to the pan and saute for another minute.
- Add freshly chopped tomato or canned tomato, cream, and salt to the mix and cook it for 5-7 minutes.
- Finally, add your marinated chicken to this pan of heavenly flavor and let it simmer for a few minutes.
- Take the pan off the flame and shut the lid for flavor enrichment.
- Garnish with freshly chopped cilantro.
Instructions
For Saffron Rice
- Rinse your Eleven Premium Basmati Rice until the water runs clear.
- Heat some ghee in a pan and add rice to it.
- Add the saffron-infused milk, water, and a pinch of salt to the rice. Close the lid and let the rice cook till the liquid is completely absorbed.
- Garnish with cilantro and serve hot!
